The best recipe is one that is almost stupidly easy, yet tastes completely decedent. I stumbled upon one of these recipes when planning treats for my office!
Mini Apple Pies
1 prepared Pilsbury pie crust, brought to room temperature as instructed on the box
3 medium sized apples, peeled, cored and cut into small pieces
1 1/2 tablespoons flour
3 Tablespoons sugar
1 teaspoon cinnamon
2 teaspoons vanilla extract
Preheat oven to 425 degrees.
Roll out the pie crust and using a round cookie cutter (or a glass), cut out circles. Roll together the scraps then re-roll out using a rolling pin to cut more circles. Repeat to get 12 circles. Slightly flatten each circle using the rolling pin.
Grease a muffin tin and place one circle into each cup, roughly shaping and pressing it to fit.
Mix together the apple pieces, flour, sugar cinnamon and vanilla extract. Place a scoop of the mixture into each pie cup.
Bake for 15 minutes or until crust is golden brown. Let the pan cool for 5-10 minutes then gently pop each mini pie out and place on a cooling rack to cool completely.
These are great any day of the year, but especially festive when served for any USA type celebration!
