Autumn Pumpkin Bars

makes approximately 16-20 bars

To do the night/morning before baking: soften butter and cream cheese

For the bars:

3/4 cup butter, softened

4 eggs

2 cups sugar

2 cups canned pumpkin

1 1/2 cups flour

2 tsps baking powder

1 1/2 tsps cinnamon

1 tsp baking soda

1 tsp salt

For the frosting:

2 cups powdered sugar

8 oz cream cheese, softened

1/4 cup butter, softened

1 1/2 tsp vanilla extract

Mix all of the ingredients for the bars together and pour into a lightly greased baking pan. Bake at 350 degrees for 30 minutes, or just until a toothpick comes clean out of the center.

Meanwhile, mix all of the ingredients for the frosting together.

Let the bars cool completely (this is crucial) in the pan, then frost and cut into desired bar size. Print Friendly and PDF
